Ingredient

  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 tsp baking powder
  • Salt
  • 1/2 cup Filippo Berio Extra Light Olive Oil
  • 1/3 cup granulated sugar
  • 1 egg, beaten
  • 2 tsp grated lemon zest

Method

  1. On sheet of waxed paper, combine flour, cornstarch, baking powder and pinch of salt; set aside.
  2. In mixing bowl, combine olive oil, sugar, egg and lemon zest until smooth; add flour mixture until fully incorporated. Shape into smooth disk.
